Florence chose a black rooster and kept it deliberately underfed so it would crow earlier than expected, whereas Siena’s rooster was well-fed and white, and it took its time. The Florentine rider set off before dawn and claimed most of the territory.

It’s a simple story, but it’s stuck, and today the black rooster marks wines that come from the original Chianti Classico area, meaning the wine meets a strict set of standards.
